Use & Care
Use
- Always use caution when handling sharp objects.
- Avoid cutting on hard surfaces such as stone, metal or glass.
- It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.
Care
- Hand-wash with warm water and a mild detergent; rinse and dry immediately.
- Avoid cleaners containing bleach or citrus extracts.
- Sharpen as needed. With regular use and honing once a week, you should not need to sharpen your knife more than once or twice a year.
- Sharpen your knife at home using a whetstone or knife sharpener designed to sharpen at a 16-degree angle, or have it sharpened by a professional.
- Store knife in a safe place to protect its edge and prevent injury.

Pricy but worth if if you value quality and precision. The feel and balance of this knife is excellent for cutting small items.

I've ha a WÜSTHOF Gourmet
I've ha a WÜSTHOF Gourmet 5" Hollow Edge Santoku Knife for 8 yr. I love it. It's no longer sharp since it's been sharpened to the groves on the blade. The Asian Utility Knife if dangerous. I've cut myself a few times, accidentally touching the tip. Twice, I've unknowingly cut off part of my finger nails I was going to return it but no longer have the box it came in, The shape and size of the Gourmet 5" Hollow Edge knife is better. I wish I had ordered it instead of the Asian Utility knife.

Asian utility
Perfect size and weight. It’s like having two knives n one. A chef’s chopping knife and still small enough to use as a pairing

41/2 inch Asian utility knife
I bought this knife for my wife to use as she is not comfortable using the larger knives. She is happy with the sharpness and feel of this knife and I am glad I no longer have to steel her old knife every time. This knife holds its edge very well considering how often it is used.

Quality :: Affordability !!!
not as pointed or short as my carbon steel 3. 5 inch paring knife (its a replacement for - as its 50 y/o) but I’ll grow into it. Has same (almost as long) heel, a good rockable cutting edge (mine’s gone after all these yrs), full tang (3 rivet) & durable handel. With nice thick spine (as my paring) and drop or sheeps foot point (Mmm. . . take some getting used to). I think I’m gunna like its S. S. but miss the ability to sharpen for thin/precision cuts & ease of that sharpening w/the paring. Pretty satisfied - we’ll see ina few yrs~
