    Use & Care

    Use

    • Never use lubricants on wheels.
    • Never insert the tip of the knife into the wheels, as this will damage the knife.
    • Do not use excessive force when sharpening knives.
    • Serrated blades should only be used in stage two.

    Care

    • Do not immerse in liquids.
    • Unplug when cleaning or not in use.
    • Wipe exterior clean with a damp cloth.
    • Remove metal sharpening residue from the clean-out area under the sharpener.

    Ok sharpener

    1st it said in stock when purchased then took 2 months to get it bc it was backordered. The sharpener works ok. Ine of the blades shakes pretty bad. The price also went up $20 a week after we bought it. Not worth it at $94

    Good sharpener

    I used the sharpener for the first time this morning. It took several tries using different knives and blade length to get the feel of the sharpener. I found it did a better job on my 8 inch "psycho" carbon steel knife than on the smaller blades. It did a five star job on my serrated blades just quickly running them through the second stage per the instructions. I think the instruction booklet should have mentioned that the sharpener will leave metal "dust" on the countertop and should have suggested placing newspaper or something else under the machine first. I have not tried to clean the interior of the machine as I only used it on 4 knives.

    I have had my ChefsChoice Diamond UltraHone Sharpener 312 for over (I think) 10-years. I use it at least 3 times a month and love it!! Best Christmas gift I’ve received from my dad! I think that he ordered it from this site. I sure do they have replacement sharpeners AND that they are easy to replace!

    Bought this for my husband to sharpen our extensive collection of Wusthof knives. Does a fantastic job-each knife took less than a minute to sharpen-I highly recommend this product.
