- It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.

- Sharpen as needed. With regular use and honing, knife should not need sharpening more than once or twice a year.

Far and Away My Favorite Knife

The perfect knife

My previous favorite knife was the 8” classic bolster. I loved it but was feeling fancy so I upgraded to the 8” performer and the difference between the two is so night and day that I can’t even explain it! If you’re willing to pay the price you will not be disappointed! I’m getting the performer pairing knife next and donating all my other knives afterwards lol!

Really nice knife

I’ve seen wosthof knifes before because of coworkers but I wanted to get my own and I’m really glad I did the knife feels nice in the hand and it’s well balance I really love the knife I’ve had it for 2 weeks and I’ve still haven’t had to sharpen it

Great Knife

This Performer was a warranty (upgrade) replacement for my Wusthof Grand Prix (loved that knife) that I’d had for over 20 years. So far, this knife performs as well if not better, I’m pleased with the purchase.
