    Use & Care

    Use

    • Always use caution when handling sharp objects.
    • Avoid cutting on hard surfaces such as stone, metal or glass.
    • It is not advisable to use any knife but a meat cleaver to cut through bone or frozen food, as the blade can be easily damaged.

    Care

    • Hand-wash with warm water and a mild detergent. Rinse and dry immediately.
    • Use the honing steel only when you feel the knife has lost some of its original sharpness, usually no sooner than six months after its first use. As you continue to use your Global knife, it will require more frequent honing. If you need to hone your knife more than once every two weeks, it is time to have it sharpened.
    • Sharpen your knife at home using a whetstone or knife sharpener, or have it sharpened by a professional.
    • Store knife in a safe place to protect its edge and prevent injury.

    Clean shaving fish skin

    Sharp and the flexibility allows for a clean cutting and filleting. I really like the handles and grip on the Global products.

    Now, everyone's go to knife in my kitchen.

    This knife was purchased to replace a very old filet knife that I had. The balance is just right and the handle to very comfortable and feels very stable in the hand. The blade is very flexible. This was the main feature that I was looking for.

    Excellent boning knife

    We have several Global knives and have used them for a number of years. We recently purchased this boning knife and it definitely does an excellent job! It made short work of boning some chicken thighs. Excellent purchase!

    Very flexible to deal with different meat cuts or slicing fish, very convenient handle for a comfortable grip. I have quite a few knives of this brand and very happy with each of those.

    I like the Global knives and now have a complete set. They are light and have a good grip. As they are Japanese knives, they have a finer edge, easy to hone, and very sharp.

    Good for Fish and Also Ribs

    I purchased this knife as a Christmas gift for my husband, who loves to fish. He has used it for salmon and striper, and feels that it has just the right degree of flex to it. It also cuts into ribs quickly and easily. You can use it to trim chicken and carve turkey, so it isn't just for boning. At the time I purchased this knife, WS also carried De Buyer's honing steels as well as their knife sharpeners, but I currently don't see them on their site. These two do a great job of keeping the knife sharp, one for occasional use and one for more routine use. The handle is a good size for arthritic hands. 'Highly recommended.

    Great Knife for Boning

    I recently had to bone a whole salmon and was looking for a knife that would easily accomplish this task; not ever having boned a salmon before. This knife was great; extremely sharp and I love the fact that it is flexible.
