Handcrafted in Japan, Shun's Premier gyuto, or Asian chef's knife, is a true kitchen workhorse. This all-purpose knife, lighter and more nimble than its European cousins, is designed for comfort, ease of use and razor-sharp performance. Stainless Damascus cladding and a hammered tsuchime finish promote easy food release while slicing, dicing, chopping and mincing.

    • Blade features a core of extremely hard VG-MAX "super steel" clad on each side with 34 microthin layers of stainless steel.
    • The striking hammered finish (tsuchime in Japanese) reduces drag when cutting and helps to quickly release food from the blade.
    • Walnut-finish PakkaWood handles have a two-position design, providing a trigger grip for pull cuts and the perfect balance point for a pinch grip.

    Use & Care

    Use

    • Always use caution when handling sharp objects.
    • Avoid cutting on hard surfaces such as stone, metal or glass.
    • It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.

    Care

    • Hand-wash with warm water and a mild detergent; rinse and dry immediately.
    • Avoid cleaners containing bleach or citrus extracts.
    • Sharpen as needed. With regular use and honing once a week, you should not need to sharpen your knife more than once or twice a year.
    • Sharpen your knife at home using a whetstone or knife sharpener designed to sharpen at a 16-degree angle, or have it sharpened by a professional.
    • Store knife in a safe place to protect its edge and prevent injury.

    My go to knife

    I have 3 Shun's in my kitchen. This is the go to knife for me for last 5 years. It is very light and nimble. The length is perfect for most tasks. the blade is very thin so it cuts very easily but because it's so thin, you need to handle it with care (chopping chocolates, hard nuts. . . ). May not be suitable for a commercial kitchen unless you're the only one handling it with care. The handle is on a small side so prolonged use may be a problem. But for a home cook, I think this is a must!

    First Japanese knife

    So far I love my 7" blade. So happy with it I purchased the 8" premier for my son. It is also the most I have spent on a knife and I am a 60 yr old chef. Keeps an edge like no other.

    This Is an Interesting Knife

    The gyuto presented here by Shun is quite an interesting knife indeed. It is a smaller profile than most Gyuto's you would normally see in Japan, but that does not detract in any way from how this knife performs. The profile is synonymous with that of utility knives in general - a flatter and narrower profile which allows for an extra nimble, functional and pointy tip with enough reach for some comfortable slicing as well. Overall the Gyuto fits very well into its description - it excels with meats particularly raw pork, beef, fish. Trimming fats off large pieces of meat is a breeze with the gyuto. The clearance at the heel of the blade also allows this to be a general purpose cooking knife in a pinch, when you need it. This is a great complimentary knife to any set, although for a proper chef knife I would go for something with more heft like a santoku or western chef.

    My first Chef's Knife.

    I have been a dishwasher for MANY years, and as such, had many responsibilities on the side - mainly food preparation. Severe carpal tunnel and Tendonitis have made the heavy industry-standard 8-IN. Chef's knives unusable, due to their weight. After years of research and deciding, I happened across this knife. It is very light, extremely well-balanced, and handles very well. It far exceeds the description given! It is very easy on the hands, too. 10/10
