    Use & Care

    Use

    • Ideal for use on any type of cooktop, including induction.
    • Oven safe to 500°F.
    • Do not use under broiler to prevent altering natural seasoning that builds up on cooking surface.
    • Do not use to cook acidic food.
    • Read instruction booklet before using.

    Care

    • Wash exterior and interior with hot water and a little soap to remove beeswax coating before seasoning.
    • Season pan before first use. Add 1/3 cup oil, 2/3 cup salt and the peels from 2 potatoes (or 2 sliced onions) to pan. Over medium heat, stir potatoes every few minutes. Salt acts as natural abrasive to remove wax and grease from surface while peels regulate heat and ensure even distribution of seasoning over pan surface. After 15 minutes, pan will start to turn brown, indicating that seasoning is taking effect. Discard contents of pan and rinse with hot soapy sponge. Return pan to low heat for 1 minute to ensure it is completely dry. Remove from heat, add 1/4 tsp. oil to pan and wipe thoroughly with paper towel until fine sheen is all that remains.
    • Hand-wash with hot water after each use. Add a few drops of gentle soap, if needed.
    • Do not soak pan.
    • Remove any residue with wooden spoon or nonabrasive scouring pad.

    Quality Pan

    This De Buyer pan was my first move from cast iron to carbon steel. I’m happy to report that this pan looks, feels, and performs extremely well. It seems to be built like it could be an heirloom item. I’m very pleased!

    Great improvement over non-stick cookware.

    Nice heavy duty pan, great for pan frying steaks. Even heat distribution. Using it on an induction cooktop without any issues. I am avoiding non-stick pans and think this is a good way forward. I also have cast iron pans but the polished bottom on this pan means less worry about scratching the glass cooktop surface.

    This pan is one you must have!

    This is my first carbon steel pan. Although I have always wanted to try carbon steel I hesitated because of the large number of cast iron and stainless steel cookware I have. Simply put, this is the best pan I have ever used. It is now my go to fry pan. I will definitely be buying more of this brand in other sizes. If you have never tried carbon steel, you must pick s size and give them a try.

    Beautiful pan

    Great pan. Just the handle is too rounded and sometimes the pan rotates when I try to pour stuff out of the pan given the weight.

    This was a repeat purchase because my kid moved out and I didn't want her stealing my pan. This is a rock-solid piece, and it will definitely outlast me... then she'll have two.

    An excellent pan for omelettes with a sharper rim

    I appreciate the good heat conductivity and even cooking. The 9 1/2 inch pan is perfect for an omelette. The only thing I wish were slightly different is a softening of the outer lip for vertical storage without risk of maring the counter or pan storage rack.
