Use

A top kitchen essential
If fruit is a regular component in your life then this knife should be a regular tool in your life. This and a nakiri do the vast majority of cutting chores on a soft rubber cutting board in my kitchen.

Classic Bird's Beak 2.5"
Pretty good for trimming/cutting vegetables. Bit of a learning curve as this is a specialty knife, but this is a finely made tool so it's worth the effort. Again, beautifully made, and we'll adapted to its specific task.
