    Known in Japan as a gyuto, this light, nimble knife is ideal for slicing meat and fish, and it performs beautifully on vegetables too.     This is the knife I'd take on a deserted island. Serrated blade slices tomatoes beautifully and cuts everything well. Buy two so you have a spare when you send one to Shun for its yearly sharpening.
