Use & Care
Use
- Always use caution when handling sharp objects.
- Avoid cutting on hard surfaces such as stone, metal and glass.
- It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.
Care
- Hand-wash with warm water and mild detergent; rinse and dry immediately.
- Avoid cleaners containing bleach and citrus extracts.
- Sharpen as needed. With regular use and honing once a week, knife should not need sharpening more than once or twice a year.
- Sharpen knife at home using a whetstone or knife sharpener designed to sharpen at a 16-degree angle, or have it sharpened by a professional. Shun offers free sharpening service; contact manufacturer for details.

Fake Sale
I see what you’re doing William Sonoma! I’ve been following this product, and I know the original price is $400 but for the Memorial Day “sale”, you raised the “suggested” price to $500 and created a fake sale of $400. lol!

I am a chef, this is my favorite knife!
I run a successful catering business in Monterey Bay, California and I have a myriad of great knives that I use for different purposes. I never knew what I was missing until I put this knife in my hands. The feel is natural and comfortable. The blade is incredibly sharp and after a month of regular use has kept its edge. It’s incredible for finely cutting vegetables, and any fine work. I am shocked that there aren’t thousands of reviews on this knife. It’s pretty special. I have every level of Shun and this one is superior for sure. Each of the three Hikari knives I have are extraordinary. Do not hesitate to get this! Your food will look and taste better, and you will have so much fun making it!

Great all around knife.
I use this for everything; meats, vegetables, fruits, etc.. This one does it all. Razor sharp blade, nice smooth grip, and good weight. I’ve used it to filet, chop, dice, julienne, etc. I’ve had it for about 3 months and it’s still as sharp as the day I got it, and I use it daily. I would definitely recommend this knife. I own the pairing knife as well. Also a great choice.
