Summary
Combining the best of two knife-making traditions, this knife from our Shun Classic line has a thicker blade than traditional Japanese cutlery and a 22-degree cutting edge modeled after European chef's knives. The thicker, heftier blade allows it be used for heavy-duty cutting tasks while still offering the superb edge retention of the Shun Classic VG-Max "super steel" blade.

Use & Care
Use
- Always use caution when handling sharp objects.
- Avoid cutting on hard surfaces such as stone, metal or glass.
- It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.
Care
- Hand-wash with warm water and mild detergent; rinse and dry immediately.
- Avoid cleaners containing bleach or citrus extracts.
- Sharpen as needed. With regular use and honing once a week, knife should not need sharpening more than once or twice a year.
- Sharpen knife at home using whetstone or knife sharpener designed to sharpen at 22-degree angle, or have it sharpened by a professional.
- Store in safe place to protect edge and prevent injury.

Sharp and Balanced
About the sharpest knife that I have ever owned. Butterflying chicken breasts, and slicing through meat and vegetables are remarkably easy. The knife is very well balanced and has a nice heft to it.

Look for even the finest flaw in blade edge. They
Micro flaws were noticed only after second hand washing. Just slightly itty bitty difference in blade edge. Check for them when buying. Two weeks later there were three tiny almost unnoticeable black spots. I had to look closely but they were there. This was inspire of gentle washing and immediate drying. 4 month later they have developed into chips but now there are 4. Before you leave the store make sure you check for any imperfections in the blade and reject that knife. There was just a slight different look to the blade. No matter what you do they will get worse.

Great knife, but could have made a better gift.
Great knife and I love the Shun line of knives. I have ordered and even purchased in store a full set and several individual knives. Though, I ordered this as a present and it didn’t arrive customized as requested. Thankfully, the customer service was able to refund the cost of initials printed on the blade, though it didn’t have the impact I was hoping as a gift.
