    Summary

Combining the benefits of a chef's knife and cleaver, this hollow-ground santoku is indispensable for chopping, slicing and dicing. Oval indentations on the blade's sides reduce friction to produce clean, uniform cuts and minimize sticking.

    • VG-MAX "super steel" blade is clad on each side with 34 microthin layers of stainless steel, creating a variegated look reminiscent of a Damascus-style blade.
    • The wide, angle-tipped blade combines the best features of a chef's knife and a cleaver.
    • Indentations along the blade reduce friction and keep slices from sticking.
    • Exceedingly sharp cutting edge is long lasting and easy to maintain.
    • Durable PakkaWood handle resists moisture and has a D shape, to sit comfortably in the hand.
    • This NSF-certified knife meets the high-level safety standards for professional kitchens.
    • Handcrafted in Japan.

    Use & Care

    Use

    • Always use caution when handling sharp objects.
    • Avoid cutting on hard surfaces such as stone, metal or glass.
    • It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.

    Care

    • Hand-wash with warm water and a mild detergent; rinse and dry immediately.
    • Avoid cleaners containing bleach or citrus extracts.
    • Sharpen as needed. With regular use and honing once a week, your knife should not need sharpening more than once or twice a year.
    • Sharpen your knife at home using a whetstone or knife sharpener designed to sharpen at a 16-degree angle, or have it sharpened by a professional.
    • Store knife in a safe place to protect its edge and prevent injury.

Saw this on the Netflix show with Meghan Sussex. Thought I’d try it and it was a great purchase.

    Best gift ever!!!

My boyfriend wanted to get me something for my birthday that I would enjoy and use so what a great gift my new Shun Classic Santoku knife was for me! I went through my collection of knives and have now only a few good/great knives and when I use my new Shun, it's such a delight. Makes my prep meal work so easy and fun. This is a great gift for someone that will last forever!

    Meal prep in Beauty

We love this Shun knife. It is a classic size for a reason - it is the "go-to" knife in the block all week long. It hones quickly, slides through its various tasks smoothly, and fits the hand well. Its very beauty lifts the task of preparing meals.

    Fantastic Knife

This knife is perfect. It was in a size that we didn't have already and it was clear from the first use that it was a winner. I would highly recommend this knife to anyone.

Terrible customer service at Williams Sonoma

I would NEVER order from Williams Sonoma again! I ordered this knife for a Christmas present for my daughter on November 20., to arrive on Dec 4th. They cancelled without telling me. I reordered it to arrive on Dec 20-the representative couldn't figure out why it was cancelled. When I called on Dec 22 to let them know it hadn't arrived, they assured me it would arrive for Christmas. It didn't. I called again on Dec 26th, and they again said it was cancelled and they refunded my money, but the representative could see they were in stock. I ordered it again, and when it didn't arrive they now said it was cancelled because they had now run out of the item in the warehouse! The woman on the phone said there was nothing to do and wouldn't let me speak to a customer representative. I'm sure the knife is fantastic, though!

    A Shun-ing Example

We have been fans of Shun knives (now about 20 or so) for over decade since our professional chef daughter introduced us to them. My wife, meanwhile, is a highly talented cook in her own right, having learned at the side of a Cordon Bleu chef in Saigon. But I have the super-outdoor grilling and butchering ones for myself. This particular knife was a replacement for a 6" kiritsuki, hollow-ground, Shun Classic that saw a decade of daily use, and now has an honoured retirement in a knife roll. The shape of this santoku, along with the 2 hollow-ground edges, make it ideal for e.g. longitudinal splitting of chicken breast for Chicken Marsala. It has also become a tradition to gift Shun knives to family, of course always with a penny added. And of course, the ordering and delivery service from Williams Sonoma is always excellent.
