    Summary

    Forged in Seki, Japan, this beautiful Miyabi knife combines exceptional Japanese craftsmanship with the best German blade-hardening technology and stunning modern design. The blade is expertly layered with SG2 micro-carbide powder steel using an innovative ice-hardening process. Each side is finished with 50 layers of floral-patterned Damascus steel to protect the long-lasting sharpness of the Cryodur blade while increasing its corrosion-resistance. The scalpel-like knife edge is hand sharpened using a traditional three-step Honbazuke method, which includes a final mirror polish to create the exquisite finish. The traditional D-shaped handle is made from prized Karelian (Masur) birch – the only wood ever used in a Fabergé egg. This chef's knife is a true kitchen workhorse, designed for a range of tasks including dicing, slicing and chopping.

    Use & Care

    Use

    • Always use caution when handling sharp objects.
    • Avoid cutting on hard surfaces, such as stone, metal and glass.
    • It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.

    Care

    • Hand-wash with warm water and mild detergent.
    • Rinse and dry immediately.
    • Use honing steel regularly to maintain cutting edge of blade.
    • Sharpen as needed. With regular use and honing, knife should not need sharpening more than once or twice per year.
    • Sharpen knife at home using whetstone or knife sharpener, or have it sharpened by a professional.
    • Store knife in safe place to protect edge and prevent injury.

    Wha wha :(

    This Miyabi Birchwood Chef's knife is beautiful with the Damascus blade and blonde Birchwood handle. However, I was a little disappointed with my purchase but maybe I had too high expectations. I thought this knife would be extremely sharp and the handle to be smoother especially at this price. My judge of sharpness is how well it cuts through a ripe tomato or a slightly wilted lime. If it cuts through either of these items like a hot knife through butter, then it's ultra sharp. It did ok with both straight out of the box but not without a bit of sawing. I have a carbon-steel knife that went through effortlessly. Also, the handle felt a little rough and I needed to oil it with mineral oil before using it. It could have used several swipes with fine grit sandpaper to smooth it out if I had some available. Lastly, I ordered this knife from WS and another knife from a website in Canada (I live in California), and the knife from Canada arrived before this knife so I don't know how to explain that. Overall, I'm pleased with the knife considering it was on sale and I redeemed a $250 WS gift card so I paid a fraction of the original price. Had I paid the full price, I would be sadly disappointed.

    Wonderful knife

    This is a wonderfully designed knife. It’s buttery smooth with how sharp it is. It’s also gorgeous with the Birchwood handle. This has easily replaced my other standard chefs knives as my go to work horse.

    Great knife for everyday use.

    This knife was everything I expected it to be. Handel feels good in hand even with the real wood, it came a little splintery, and I ended up sanding it slightly but it's probably been in some warehouse for some time. SUPER SHARP out of the box and is really easy to hone. Box did come slightly damaged like as if someone shook it far to hard but blade was not damaged and I don't blame Zwilling in the slightest. My handle came with a lot of "personality" but they all come different which is cool but I have seen it come kinda plain. I 100% would recommend to someone that knows how to take care of a knife but I wouldn't for beginners or people that wouldn't
