    Use & Care

    Use

    • Ideal for gas and electric cooktops.
    • Oven and broiler safe.
    • Do not use high heat for extended period of time.
    • Do not leave empty pan on heated burner for extended period of time.
    • Cooktop knobs or controls cannot be used at 100% heating power; they need to be used at 60% capacity (start gradually from this range).

    Care

    • Allow pan to cool before washing.
    • Hand-wash; dry immediately with a soft cloth.
    • Avoid using steel wool, steel scouring pads or harsh detergents.
    • Do not use bleach on stainless-steel interior.
    • Copper will develop a rich patina over time. This will not affect the pan's cooking performance. To keep the exterior looking new, use a copper polish or a combination of lemon and salt.

    Disappointing

    Poor quality control from Mauviel & Williams Sonoma. The bottom of the M'150 Copper Fry Pan was sanded half way up the rear side panel, which normally should be shinny and polished. It's disappointing because I purchased this specifically to hang on my wall for a show piece (when not in use) and to hand down to my children. She attached photo...

    This brand is amazing - best pans I have ever owned! I have owned 2 sauté pans for decades and this new fry pan is no different: fantastic to cook in. I bought one for my son, he is also a fan of Mauviel, for Christmas and when he opened it I decided to get one for myself.

    Great skillet but difficult to handle.

    I've used this skillet about a dozen times to sear meats, cook eggs, saute vegetables, and make fried rice. As I expected from a Mauviel copper skillet, it is stick resistant, performs well, and makes for a beautiful piece of kitchen jewelry. I do however, have a major gripe about the design of the handles. The picture looks as though the handle slopes gently upwards (like an AllClad skillet). It actually slopes downward, so that picking up a 10 inch skillet with two eggs becomes a two hand job. This really bothers me. I will never understand why it is designed this way. (The 12 inch skillet does not do this). I can live with it since the pan itself is gorgeous and cooks very well.

    Very nice pan!

    I bought this 10.2 inch pan during the sale. I was worried about the copper only being 1.5 mm thick, but it holds up nicely. It is very responsive to heat although it took longer to cool down than I expected. This is my first copper pan and I make curries in it as it holds about 4 servings at a time. I do wish the sides were higher, but I guess I'll have to buy a sauté pan for that luxury. Overall it was a great buy and I would recommend it to anyone who wants an affordable way to start out with high quality copper. I did note that the SS lining did discolor more than I am used to but it's a minor factor.
