    This hollow-ground santoku knife excels for precision chopping, slicing and mincing of meat, fish and vegetables. A special curved bolster design by architect Matteo Thun promotes a perfect professional grip for comfort and safety, and allows both Western rocking cuts and Asian chop cuts.

    Use & Care

    Use

    • Always use caution when handling sharp objects.
    • Avoid cutting on hard surfaces such as stone, metal or glass.
    • It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.

    Care

    • Hand-wash with warm water and a mild detergent. Rinse and dry immediately.
    • Maintain the knife's cutting edge by regularly using a honing steel.
    • Sharpen as needed. With regular use and honing, your knife should not need sharpening more than once or twice a year.
    • Sharpen knife at home using a whetstone or knife sharpener, or have it sharpened by a professional.
    • Store knife in a safe place to protect its edge and prevent injury.

    Great Knife

    This is probably the best general cooking knife I have ever used...and I am 70 years old. I wonder why it took me so long to buy a Santuko and the heft, balance and edge of the Zwilling Pro is all I could ask for in a knife. From vegetables to fruit like limes and oranges it is a pleasure to use this knife to speed cooking and make accurate positive cuts consistently. I love this knife.

    Different in weight

    Purchased this knife as a replacement for one that was a gift several years ago. Although the style number was the same the knife itself was not. The blade and handle shape were slightly different, which was acceptable, however, the overall weight of the knife is not the same, Original knife is 9oz and new knife is 6.6oz. I’m not sure if the materials used are different causing the change. Getting the “right” knife is a completely personal choice. For me, it needs to feel good in your hand when using it. I was disappointed with this change to the product.
