    Baking Fun

I'm still in the experiment phase of using my Cuisinart bread maker, and am very much enjoying the process of trying different mixes and recipes and determining which are going to be the go-to successes.

    Lovely highly functional bread maker

I have being throughly enjoying this bread maker. It is not my first bread maker, but certainly the easiest to use because of the many options. The bread loaves are beautiful and recipes are delicious. Addition recipes are available on the Cuisinart web site. The ease has prompted more use, so available bread is not a problem.

Cuisinart Bread Maker doesn't make great breads!

The instruction booklet has problems and the machine is at best average. I followed the directions for the Parmesan pepper French 1 lb loaf using shaved parmesan. The bread came out in crumbles because it was too dry. The recipe should have had advice to compensate for cheese with lower moisture. The sourdough recipe has sugar and yeast in it. Sourdough is NOT made with sugar and yeast! I found a "real sourdough recipe someone adapted for another breadmaker" but it did not work in this machine. The Artisan dough cycle cannot be adjusted to wait for the slower starter rise. I am quite disappointed that I have not been able to make a real sourdough. This is a huge negative! The recipe for French Bread on page 25 has the hydration ratio of 84% for a one pound loaf, but 70.5% for the two pound loaf. I haven't even gone through all the recipes. All of them should have weight as well as measures. I have been working with the machine for a month and have really tried to make breads; I'm not impressed and would like to return the machine. As a whole I have not made an outstanding loaf of bread. The very best loaves I've made are average when compared to grocery store bread, and too many have been too dense. I'm disappointed that many of the loaves that have come out of the bread maker don't have a crown but instead have a "fallen or sunken" center. I do not live at a high altitude. My ingredients are fresh. My house is climate controlled and sits around 75 degrees. The bread maker is not in the sun. And finally, I have tried a couple loaves with vital wheat gluten to help with the structure. I would not recommend this bread maker to anyone unless they simply want average bread that is fresh. I purchased this machine at Williams Sonoma Seattle WA.
