Use

- Avoid cutting on hard surfaces such as stone, metal or glass.
- It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.
Care
- Hand-wash with warm water and a mild detergent; rinse and dry immediately.
- Avoid cleaners containing bleach or citrus extracts.
- Sharpen as needed. With regular use and honing once a week, your knife should not need sharpening more than once or twice a year.

Fantastic product!

Shun Premier Perfection
This knife is wonderful! I have recently purchased a couple of different Shun knives to replace some older knives and this knife is very comfortable to hold and slices so easily, extremely sharp!

Very flimsy metal
The knife chipped within a month. We do not put our knives in the dishwasher, only handwash. I was using this knife to cut celery, and the tip completely fell off. Then I also notice a knotch in the blade of the knife as well. After contacting Williams Sonoma, I was told I would be sent a shipping label and sent a new knife. Two years later, I just found the knife in a box awaiting a promise never answered. I'd like a refund.
