    Use & Care

    Use

    • Always use caution when handling sharp objects.
    • Avoid cutting on hard surfaces such as stone, metal or glass.
    • It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.

    Care

    • Hand-wash with warm water and a mild detergent; rinse and dry immediately.
    • Avoid cleaners containing bleach or citrus extracts.
    • Sharpen as needed. With regular use and honing, you should not need to sharpen knife more than once or twice a year.
    • Sharpen knife at home using a whetstone or knife sharpener designed to sharpen at a 16-degree angle, or have it sharpened by a professional.
    • Store knife in a safe place to protect its edge and prevent injury.

    Wife’s favorite knife

    I got this knife for my wife a year ago and she is in love with it. It is great at cutting vegetables. It looks like it is cutting warm butter instead of vegetables.

    Hands down my favorite knife

    I have a Shun Classic knife set and, for the most part, am very satisfied with the knives. I saw this knife and was immediately intrigued by the shape as well as the beautiful handle and blade. I talked myself out of buying it a few times because I didn't think I needed another knife. But...I kept thinking about it and finally decided to splurge a few months ago. It is hands down my favorite knife. I use it almost every day. It feels amazing in the hand (much better than the Classic knives) and makes quick work of vegetables. Chopping, dicing, slicing...whatever...this knife just feels so superior to any of the knives in the Classic set. The shape may seem a little odd, but once you use it, you'll never want to go back. And it looks fantastic. If I could do it all over again, I'd get all Hikari knives.

    excellent knife for chopping veggies

    i picked this up a few months ago, to compliment the hikari set that i have had for a few years. the weight of this is excellent, and its straight blade edge make quick work of all the vegetables i've encountered!
