    Summary

Brothers Jordan and Jared Schmidt lend a designer's sensibility to the creation of their cutlery, and in the process have redefined the art of modern knife making. Their Damascus series combines German manufacturing excellence with high-carbon Japanese stainless steel that's skillfully layered, forged and folded for unparalleled performance. Ergonomic handles are expertly carved from coconut with full tangs for optimal balance and smooth contours for a comfortable grip. The santoku knives combine the features of a chef's knife and cleaver, making them ideal for chopping and slicing fresh vegetables, fruits and small cuts of meat.

    • Blades are forged from 65 layers of high-carbon VG10 Japanese stainless steel.
    • Designed to maintain their razor-sharp edges.
    • Resin-infused coconut handle.
    • Full tang construction and ergonomic contours promote comfort and balance.
    • Made in Germany.

    Use

    • Always use caution when handling sharp objects.
    • Avoid cutting on hard surfaces such as stone, metal or glass.
    • It is not advisable to use any knife but a meat cleaver to cut through bone or frozen food, as the blade can be easily damaged.

    Care

    • Hand-wash with warm water and a mild detergent. Rinse and dry immediately.
    • Sharpen once or twice monthly, ideally with Schmidt Brothers pull-through sharpener to maintain ideal blade angle.
    •
    • Store knife in a safe place to protect its edge and prevent injury.
