    Summary

    Miyabi Black knives combine exceptional Japanese craftsmanship with superior German engineering and stunning modern design. Each one features a core of micro-carbide powdered MC66 steel, ice-hardened to an impressive 66 on the Rockwell scale. It's protected by 132 layers of Damascus stainless steel that also create the blade's intricate floral pattern. The scalpel-like knife edges are hand sharpened using the traditional three-step Honbazuke method. Designed for comfort and control, the ergonomic D-shaped handles are made of black-leaf maple burl dyed to resemble black ash. This Japanese-made knife is ideal for carving thin, uniform slices of meat and poultry.

    Use & Care

    Use

    • Always use caution when handling sharp objects.
    • Avoid cutting on hard surfaces such as stone, metal and glass.
    • It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.

    Care

    • Hand-wash with warm water and mild detergent.
    • Rinse and dry immediately.
    • Maintain cutting edge by regularly using honing steel.
    • Sharpen as needed. With regular use and honing, knife should not need sharpening more than once or twice per year.
    • Sharpen knife at home using whetstone or knife sharpener, or have it sharpened by a professional.
    • Store knife in safe place to protect edge and prevent injury.

    Beautiful, razor sharp. Amazing knife.

    We own many Wusthof knives but they do not compare in any way to the quality of this knife. The blade needed only to be touched to a piece of paper to slice of small shreds easily. It is SO razor sharp. And it is beautiful to look at. Amazing knife.

    Absolutely Worthy " Slice" of Art

    The knife is GORGEOUS, Absolutely stunning!!!! After much research, I decided to invest in the Miyabi Black series knife. This 9.5' Slicing knife is well made. My hand feels very stable using this knife. Tested it on slicing a very thin slice of prime rib and it's absolutely gorgeous. I personally also owned the Shun Premier knives set and this miyabi black slicing knife top all my Shun Premier knife. Worth the investment !

    Amazing!!

    Beautiful and Capable Slicing Knife

    [This review was collected as part of a promotion.] The 9.5 inch Slicing knife is a work of art. Not only is it beautiful to look at it is extremely capable of everyday slicing. I do prefer just a shorter length for daily use, but this is able to slice through longer meats where you need to get only one cut.

    Sharpest Knife Out There!

Great for carving a turkey during Thanksgiving or slicing fish when you want to do a sushi night at home. Also a great show piece with the beautiful handle. It’s truly a masterpiece.
