    • Avoid cutting on hard surfaces such as stone, metal or glass.
    • It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.

    Care

    • Hand-wash with warm water and a mild detergent; rinse and dry immediately.
    • Avoid cleaners containing bleach or citrus extracts.
    • Sharpen as needed. With regular use and honing once a week, you should not need to sharpen your knife more than once or twice a year.
    • Sharpen your knife at home using a whetstone or knife sharpener designed to sharpen at a 16-degree angle, or have it sharpened by a professional.

    The Knife You Will Love

    It finally happened, I found the knife I have been looking for my entire life. It was love at first sight better when I put it in my hand as though I was born to have this happen. I have had so many chefs knives that one could say its akin to hoarding to have so many of them. But it takes a lifetime to find the one that becomes part of your being. The write up, the design, the artistic vision that made that come to fruition. An extension of my hand, feels perfect and how it cuts. Oh babee, be careful.     Fantastic knife

    I work at a fine dinning restaurant and this knife is my work horse. It is sharp and very comfortable. I personally like a little extra weight which makes me prefer it over my baddies myabi. Cons is maybe it will chip rather than bend, I did chip my tip (well a coworker did) by dropping it. Shun offered to reshape it but I don't have the availability to send it out as it's my work knife.i make sure to hand wash it and I hone it as they show in a YouTube video that shun actually put out themselves. Would definitely recommend this knife when it's on sale, I paid $215 for it and I'm happy, I've had it for about 2 years now and I use it daily at work and home for everything from cutting steaks and butchering chicken, fish and other proteins to slicing tomatoes and other veg that need to look perfect.
