Summary
The Shun Premier collection is distinguished by hammered blades and walnut-colored PakkaWood handles that evoke the artistry of traditional hand-forged knives. Handcrafted in Japan, the blades are thin and lightweight. This master utility knife combines the do-everything capabilities of a chef's knife with the nimbleness of a compact knife. Its slightly curved belly allows rocking cuts for superior mincing.
- Blade features core of extremely hard VG-MAX "super steel" clad on each side with 34 microthin layers of stainless steel.
- Striking hammered finish (tsuchime in Japanese) reduces drag when cutting and helps quickly release food from blade.
- Walnut-finished PakkaWood handle has two-position design, providing trigger grip for pull cuts and perfect balance point for pinch grip.
- Stainless-steel endcap embossed with Shun logo adds stability, strength and wide weight distribution from end to end.

Use & Care
Use
- Always use caution when handling sharp objects.
- Avoid cutting on hard surfaces such as stone, metal and glass.
- It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.
Care
- Hand-wash with warm water and mild detergent; rinse and dry immediately.
- Avoid cleaners containing bleach and citrus extracts.
- Sharpen as needed. With regular use and honing once a week, knife should not need sharpening more than once or twice a year.
- Sharpen knife at home using a whetstone or knife sharpener designed to sharpen at a 16-degree angle, or have it sharpened by a professional. Shun offers free sharpening service; contact manufacturer for details.
- Store knife in safe place to protect its edge and prevent injury.

Does most everything. Love it for vegetables.
Shun makes knives that stay sharpe longer than German blades. A joy to use, makes quick work of meal prep.

Best handle and balance
I held every knife they had in stock. This handle felt like an extension of my hand. The shape was perfect, and the weight/balance was superb. After about 6 weeks, I'm just in love. It's also BEAUTIFUL to boot!

Going to buy a second.
I have a block of Shun knives I picked piecemeal and this is my absolute favorite. I also have a 9" chef from the premier and the 7" Santoku from the classic series. They are all good but when I reach for the block, 9 times out of 10 this is my go to. My current one got a little damaged from a fall (chipped the tip) and I will absolutely be getting this knife a second time if it goes on discount.

Shun is Great
I bought this as a gift as I have been using mine for years. It's a good 24/7 knife in that it can do a lot for you and Shun is fantastic. You can send it to them for sharpening (they charge a fee) but many William Sonoma stores will also do it for you and often times without a charge for one knofe.

All Shuns are worth it
I personally use a Shun Classic Santoku Chef knife from Shun for 85-90% of my cuts. I have about 10 different knives from Shun. They are ALL versatile and hold an edge really well. I try to hone the knives after about every 10th use or anytime I cut a challenging vegetable that has a thick or rough skin. I get my knives professionally sharpened every year from an authorized Shun dealer that operates out of our famers market.

Sharp and quality product.
Super sharp. I like the right. The curvature is something you have to get used to.
