    Summary

Named Hikari after the Japanese word for "illumination," the masterfully crafted, award-winning knives in this set are distinguished by their stunning birch PakkaWood handles and "hornet's nest" pattern. Extraordinarily sharp with a long-lasting edge, the blades have microserrations that reduce friction for clean, effortless slices that enhance the flavor of the food. The set includes five essential knives, as well as a dual-textured honing steel and solid birch block for eye-catching display and easy access.

    • Shares the same award-winning construction as the Hikari chef's knife – named 2016's Kitchen Knife of the Year.
    • Dual-core stainless steel blades are clad on each side with 71 micro layers of high-carbon, high-chromium stainless steel to create a "hornet's nest" pattern reminiscent of a Damascus-style blade.
    • Exceedingly sharp cutting edges, hand-sharpened to a 16-degree angle, are long-lasting and easy to maintain.
    • Polished bolster promotes a comfortable chef's grip.
    • Durable birch PakkaWood handle resists moisture and bacteria and has a beautiful low-gloss finish.
    • Embossed endcap adds beauty and balance.
    • Handle offers a superb grip for both left- and right-handed users.
    • Handcrafted in Japan.

    Use & Care

    Use

    • Always use caution when handling sharp objects.
    • Avoid cutting on hard surfaces such as stone, metal or glass.
    • It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.

    Care

    • Hand-wash with warm water and a mild detergent; rinse and dry immediately.
    • Avoid cleaners containing bleach or citrus extracts.
    • Sharpen as needed. With regular use and honing once a week, you should not need to sharpen your knife more than once or twice a year.
    • Sharpen your knife at home using a whetstone or knife sharpener designed to sharpen at a 16-degree angle, or have it sharpened by a professional.
    • Store knife in a safe place to protect its edge and prevent injury.

    Great, Beautiful Knives!

We’ve been wanting to invest in knives for quite some time and let me just tell you that having legitimate knives has completely changed our lives lol. Not only do these look beautiful, but they’re as good as I hoped they would be. Now I don’t have any other professional knives to compare them to. I’m coming from a Costco Set of like Cuisinart knives LOL, so my expectations were probably pretty low, but I would definitely recommend these to anyone who is looking to up their knife game.

Perfect block size and number of knives I use

The compact sized block is perfect for a small space, Not to mention the beautiful knives and the Sharp blades for the task at hand. This smaller 6 knives set has all the knives I do utilize Including a bread knife.

    Cuts like butter

These are sharp, high quality knives I have researched for several years and are worth the price. They are light, thin, and should be used as designed. I read many reviews where the thin tips were broken or chipped with use, that too concerned me and I have since learned that’s due to misuse. When correct used and cared for, like any high end knife purchase the Hikari help you chop, cute, dice and slice like a pro. Not to mention the red handle accents are very lovely.

High price to pay for knives that chip! Safety concern . Where are the chiped pieces going? In my food ? In my garbage?!

    Super disappointed

Two of my knives have already chipped in less than 3 months. For the price you pay for quality it’s crazy to me I have to send it in for sharpening and repair so soon.

    Tip broke easily

I've had a set of these knives for just a couple months. They were very sharp and effective at the start and re-sharpen easily. Also with proper hand washing haven't notice any rusting. The issue I have with them is that a drop to our hardwood floors from a few feet up, with an initial landing on the tip then on the side resulted in the tip breaking off. This is my first higher end purchase of knives, so not sure if that is a common quality of metal issue. Seems unusual for such a high priced item that it can't withstand a basic fall. William Sonoma doesn't offer any remedy for the situation. Again a bummer of backing up product sold.

    Disappointed

Disappointed for the price because although they slice super well, the blades are rusting within a week of using them despite washing them by hand shortly after using them, drying them with a towel and then air drying them before placing them back in to the block.
