    Summary

We collaborated with the legendary coppersmiths at Ruffoni to create our exclusive Thermo-Clad™ Copper series. Designed to bring the joys of cooking with premium copper to home cooks, the bonded pans combine beautiful mirror-finish copper with the practical maintenance of stainless steel. This cookware set offers maximum heat responsiveness on the stovetop, giving you more control for every task from sautéing and simmering to braising and stir-frying.

    • Thermo-Clad technology bonds thick, mirror-polished copper to a thin interior layer of 18/10 stainless steel.
    • Made from 1.2mm-gauge copper.
    • Solid copper is the fastest heat conductor, ensuring quick, efficient and uniform heating with precise temperature control.
    • Stainless-steel lining is nonreactive and ensures ease of use and maintenance for a lifetime.
    • Ergonomic stainless-steel handle provides a comfortable grip and maximum control.
    • Double-wall insulated stainless-steel lid keeps food warm.
    • Oven safe to 450°F.
    • Handcrafted in Italy by Ruffoni exclusively for Williams Sonoma.

    • Oven safe to 450°F.

    Care

    • Allow pans to cool before washing.
    • Hand-wash; dry immediately with a soft cloth to prevent water spots.
    • Lids are dishwasher safe.
    • To remove stubborn food bits, boil a mixture of water and vinegar in the pan to dissolve food particles.
    • Avoid using steel wool, steel scouring pads or harsh detergents.
    • Copper will develop a rich patina over time. This will not affect the pan's cooking performance. To keep the exterior looking new, use a copper polish or a combination of lemon and salt.

    Skeptical about a shiny dupe

Aren't these pans suppose to be flat bottom? I just used for the first time on a ceramic electric stove and the bottoms are no longer copper colored and my pan is wobbling and not flat to start.

Good pans for cooking, but copper faded to gold

While the pans themselves are great for cooking (heat distribution, durability), the copper color somehow turned gold! I have many copper products that I have seen tarnish blackish and have polished them clean, but it seems the color on these have turned to a light gold with high heat on the stove… polish doesn’t seem to be bringing the color back.

    Spots after first use

Feels nice and heavy. Was really excited to use it. However, I got spots on the cooking surface after the first use. Disappointed.

The absolute best cookware I have ever owned.

Over time I have had them all Caphalon, two versions of All-Clad, and many others. By far this is the best I have ever owned. The heat distribution is even and I am using half of the flame I was using with the others. The extra maintenance it takes to maintain the copper is not an issue. Just a little rubbing with a copper cleaner every 20 or so uses and its good to go.

The best cookware we have ever owned!

These are simply the best pots we have ever owned. We purchased this set, along with the copper wok, copper 2 quart and non-stick 8, 10 and 12 inch skillets. We chose them because they look beautiful - but keep in mind they need to be polished as they tarnish after use. With polish that Williams Sonoma sells or other retailers, Mauviel Copper Cleaner or Wright's Copper Cream (we got Wright's), the pots come back to a bright finish and look new. These are a little more maintenance than your average pots but well worth it in our opinion. After every 10-15 uses you can polish as needed. The best thing about them is their heat conductivity and overall cooking quality. Even if the burner is in the center of the pot, the entire surface conducts heat across the entire pan leaving to the most even cooking we have even seen in cookware (and we own some All Clad too). They are a little heavier than basic aluminum cookware but the quality is incomparable. The staff was great in helping us in both store locations where we bought them and we really appreciate how kind, patient and thoughtful everyone was. Thank you Williams Sonoma. You made us loyal customers.
