The saucier is an Ingenious invention, so perfect

I love Demeyere cookware, its Atlantis line is fabulous, and the saucier. I own this same saucier for more than 6 years. Every time I use it to cook the special type of cooking it calls for, I always marveled by its brilliant design, high quality material and workmanship. Nothing is more frustrating when reading the silly two cents from ignorant consumers who bashing a perfect product. It seems they have no idea why the "cover does not fit". Hello, it is by design. I wonder if they read the functions of a product before spending the money? I also never understand why and how people could scratch up their Demeyere cookware. I own other line of Demeyere cookware other than Atlantic, some pieces I have for decades, all of them are in perfect condition, they as functional as the day I purchased them. The only regret I have is I did not buy Demeyere cookware when I first started purchasing my own cookware. Over the years, I toss away cookware of various brands, I gave away the All-Clad cookware I had, now I only use cookware of Demeryer and Le Creuset.

    Scratches easily

The handle stays cool. The handle on the lid stays cool, which is very nice. But these are the only good things I can say about it. The lid doesn't quite fit, but perhaps that's by design. Not a big deal. The pan is big enough to require a helper handle, but again - not that big a deal. My biggest problem with this pan is that it scratches very easily. I don't use any metal utensils and yet somehow the pan got a lot of scratches after a couple weeks of use. It is scratched more than All-Clad and Mauviel copper pans that I have had for more than two decades. Other than that the pan is ok, if overpriced for the quality. I've had it for months now and I still use it, but I regret the purchase.

    Like enameled cast iron

This is a beautifully made saucier; perfectly shaped for sauces. The build quality, like all the Demeyere lines, is exceptional. For these reasons, I give it 5 stars. Some complain about the lid. I see no issue. Unlike a typical lid, this fits below the top level of the pan. When using this pot, the things you'll notice immediately will be the weight and the slowness to heat/cool. To me, it is very similar to cooking with enameled cast iron. Unfortunately, this does not match my cooking style - which tends to prefer a more reactive pot for cooking. The bulk of my cooking is done with the CopperCore line from All Clad, as they heat/cool much faster. But, the line is limited. When I need something outside that line, I go with Demeyere. I purchased a Industry 5 stew pot [which is fantastic] and noticed the slower heating/cooling as compared to the All Clad. The Atlantis line is even slower. Hard boiling eggs for 9 minutes, then running cold water in the pan for 1 minute still left the inside of the pot warm [when touching through the water]. Overall, I prefer the Industry 5 series over the Atlantis based on my style of cooking. But, if you tend to cook low/slow, the Atlantis line is really exceptionally well made cookware.

    Good Saucier Poor Lid

Beautifully piece of equipment. I've cooked with it frequently and it's the perfect size when serving up mashed potatoes or other sides for a small group of people. It also excels in cooking liquid dishes as it's easier to stir the bottom of the dish due to the sloped sides of a saucier. Unfortunately the "perfect fit" lids is a completely false advertisement. This lid is a repurposed lid from their sauce pans and it does not fit the saucier well and slides around. That's unacceptable for something this expensive and is deceptively marketed.

    It's great!

I love it! Cooks very evenly and is easy to clean.

Nice, but 3.5 qt has wrong lid

I bought this 3.5 qt conic saucier. It’s very nice, but the lid doesn’t match. According to customer service, this is intentional. I assume they reuse a lid from another pan. The lid is about 5.2 mm too small. That might not sound like much, but it really doesn’t fit. Don’t buy this size if you need a sauce pan with a lid that fits properly.

    Great pot, poor cover design

Agree with one of the previous reviews....bought this pan at Williams Sonoma but noticed that the cover was too small for the pot.....wondered why the price had a discounted price vs. that quoted on the website...a bit of a shame since it's a really nice pot...good thing I have other covers that fit better, but this should not have to be the case!

5*stars saucier with a terrible lid.

The way to cook simple and fast is allways to me, much more easy in a big saucier. It can be the only one pan, if the case allows. This Demeyere Atlantis saucier has the shape to cook easy, and the ability of heat retention to cook slowly, and well made over any other. I used commonly a rounded saucier sauté pan from Matfer Bourgeat: 2.5mm of cooper lined with stainless steel, and honestly, my people as my wife, my daughter, and the lady who help us to cook every day, they prefer the Demeyere Atlantis. Please don’t interpret me wrongly, aluminum and cooper are different movies, cooper is very fast, and detailed for a pan. But all around believe me from the pleasure to cook, until the act of cleaning. Demeyere Atlantis saucier is over all others. The one really problem is the lid. A masterpiece of saucier with a simple non matching inestable lid, is a combination that until now, I can’t understand.
