    Use & Care

    Use

    • Before first use, hand-wash with hot, soapy water to remove beeswax coating. Season interior with oil to build natural nonstick surface.
    • Ideal for use on all cooktops, including induction.
      Oven safe to 425°F.
    • Avoid cooking acidic food until pan is well-seasoned.
    • Do not overheat empty pan.
    • Use wood, silicone or heat-resistant nylon tools.

    Care

    • Hand-wash.
    • Do not soak.
    • Do not clean in dishwasher.
    • Dry thoroughly after cleaning to prevent rust.
    • Reapply seasoning as needed to maintain performance.
    • Exterior will develop patina over time. This is normal and will enhance performance.

    Versatile for baking

    This pan is so smooth and the handle is great. I smoothed down the hole in the handle to make it smoother. It is great for making crepes and flatbread or a personal pizza

    Great pan, excellent handle.

    Great pan, love the Pro style handle! I have used cast iron for years, but this is my first carbon steel pan. I purchased the 8” omelet, great pan, I love the pro style handle! The additional benefit to the Pro handle, other than the ergonomics, is you can season in the oven. I followed the manufacturer stove top seasoning method with less than ideal results. I stripped the pan and went to the oven method using a wax / seed oil type paste and it turned out beautifully. No more non-stick in my kitchen.

    Gorgeous to look at, jury is out on the handling.

    I have only used it twice so far, so consider my perspective subject to revision. Seasoning went fine, the protective wax came off MUCH easier than Matfer's coating. The shape is good. It TINGs (once, mayyyybe twice) while heating and cooling, something that neither of my Matfers do. It cooks fine, sadly I haven't been able to use it for eggs yet as the household baker had dibs on the eggs on hand. So, why only 3 stars? Balance and the handle. The good is that handle is GORGEOUS. If I were to season this up into an "art pan", it would look glorious on the wall. In use though? It is too thin, AND it narrows progressively right where I grip it. I'm used to either All-Clad's handles or Matfer's with a silicone sleeve. The skinny combined with the heavier weight of the pan compared to my other skillets throws off handling because of the poor grip and nose heavy balance.

    It’s not a nonstick but has NO stick.

    After properly seasoning the pan. You’ll be able to cook an omelet as if were a nonstick pan. The quality is superior and can only be described after using it.

    High Quality Carbon Steel Pan

    Very high quality carbon steel skillet. I found it easy to season in the oven, and repeated the process 3 times. It took a while to learn the right temperatures to properly cook eggs, but after the water drop test, adding the oil, and then waiting a minute for the pan to cool down, eggs were cooking in a non-stick fashion.

    Nice pan

    I own several mineral B and mineral b pro pans. I enjoy an omelette every now and then and this pan helps make it happen. My first carbon steel experience was a decade ago or more. I bought a lodge brand carbon steel skillet. Trusting their cast iron for quality and durability I figured it was a safe buy. It warped and became a spinner the very first cook I did with it. You get what you pay for. It was cheap but is also went into the scrap heap somewhere. I’ve never had a Debuyer pan warp. I’m now on an induction cooktop so flatness is a requirement. Cooks as well as any of my cast iron and sometimes better due to the fast response time in temp changes. It’s about half the weight of cast iron.

    Versatile workhorse! Not just for eggs!

    This is simply the best all around pan in my kitchen! Sauté, shallow fry, sear meats, and of course eggs! It was easy to season and is so versatile that I rarely use anything else. Now I just need an Affinity stainless pan for acidic recipes and I can donate all of my other pans!
