    Use & Care

    Use

    • Ideal for gas and electric cooktops.
    • To protect the tin lining from damage, do not heat the pan empty or at temperatures above 450ºF.
    • Use wood, plastic or heat-resistant nylon tools to avoid scratching the tin lining.

    Care

    • Allow pan to cool before washing.
    • Hand-wash; dry immediately with a soft cloth.
    • Avoid using steel wool, steel scouring pads or harsh detergents.
    • Copper will develop a rich patina over time. This will not affect the pan's cooking performance. To keep the exterior looking new, use a copper polish or a combination of lemon and salt.
    • The tin lining protects foods from reacting with copper but will become discolored with use. Depending on the frequency of use and types of food cooked, the tin lining may eventually have to be replaced. To prolong the liner's usefulness, avoid cooking acidic ingredients in your tin-lined cookware.

    It bends

    Same issue as other reviewers- when put on heat it bends! It’s not making contact with the burner in most places which causes uneven cooking. Completely unacceptable

    Expensive piece of tin

    I really wanted to love this pan and was looking forward to cooking with it. I don't know if I received a defective item or if this the quality, but my pan did not sit flush against my electric stove. It wobbled and did not heat evenly. I tested it out by making some meat patties and some were nice and browned while others did not brown as well (I did this on low-medium to low heat and did not heat the pan until the food was in it as you are supposed to do with copper pans). The copper is also extremely thin (almost looks painted on as parts were worn off). I'd say the copper is 1mm or just under. I tried to inquire with Raffoni about the thickness of the copper, but I got a generic answer of 1-2mm. When asked specifically about this pan, I received no response. It seems that good quality at a good price are a thing of the past, and we have forgotten what it means to have good quality in our lives. I will be looking for a quality copper pan when in Europe or at vintage shops or ebay. Anything sold in the States seems to be very poorly made despite what they claim. Very disappointed.

    Best Choice for Eggs or Cream Sauces

    Copper responds quickly to heat without any hot spots. It is my favorite pan for frying an egg with a touch of olive oil. The lower temperature brings out the best in the hen's creation. We have found that the taste is superior to an egg cooked in copper lined with stainless steel. The brass artichoke handle is exquisite. The shape ideal for flipping. The Mauviel CopperBrill makes cleaning a snap. The pan may need to be re-tinned in ten years? But that is many delicious meals away.

    I have this pan, and I only choose to use it sometimes, I use the stainless mauviel for most. I own this mostly for it's looks. Beautiful. it's a piece of art.

    Elegant but not full 2.5mm copper

    These are beautiful pieces and incredibly stylish. However, if you want true high performance copperware be aware that the thickness of these is lacking. Only 1 to 1.5mm thick copper. You need at least 2 to 2.5. I bought this one and returned it once I found out how thin the copper was.

    Best sauté pan I've ever owned

    This is my go-to pan for almost everything. It distributes heat well, maintains an even heat, and cleans up like a dream. I've been using this pan from Ruffoni for 4 years or so and absolutely love it. The person here who rated it 3 stars having never cooked in it is unfair. How can you rate a pan used for cooking by looking at it? Ruffoni makes very high quality cookware, one of the best in my experience and I've been cooking extensively for over 40 years.

    quality? handle shape and final finish

    Beautiful pan. I wanted a light weight copper fry pan as my all-clad copper core fry and saute are heavy at 3 and 4 pounds. It does seem like thin copper with tin interior rolled edge which is fine, as I wanted light weight. So far - have not tired to cook with it yet. The appearance is nice with the brass decorative handle base and the copper shape. >1)The main problem is shape of the edges of the brass handle. The top side edges are squared, not rounded, so the edges cut into my hand when I pick up the pan. I have to pad the handle to pick it up. I would have liked a wider handle and possibly shorter handle to balance the size of the pan (though this would make it heavier.) >2) The brass handle has a corroded strip on the top and bottom close to the pan (not near the 3d-design), so the handle does not seem to be adequately finished. This should have been caught in an inspection, unless the corrosion occurred later which seems doubtful considering the packaging.
