Williams Sonoma Traditional Carbon Steel Flat-Bottom Wok, 14"
-
Detail
Summary
We combined the features of a traditional Asian wok with the modern convenience of a flat bottom, heat-resistant handle and helper handle to make it even easier and more comfortable to use. The body is crafted from carbon steel to heat quickly and evenly, with sloped sides for easy turning and a small base to gather liquids. Hand hammering lends appealing texture while the wooden handle adds a contemporary accent that's comfortable in hand. Use it for stir frying, deep frying, steaming, braising and more.
- Traditional 1.2mm carbon steel construction disperses heat evenly and quickly.
- Sloping sides ensure food stays directly over heat source and simplify tossing.
- Comfortable wood handle protects hands from heat.
- Helper handle facilitates lifting and carrying.
- Easy to season to create naturally nonstick surface.
- A Williams Sonoma exclusive.

Great product/horrible shipping
The product is amazing. The shipping from Williams Sonoma was horrible. First it was delivery in May, then June. Didn't actually arrive until July. It was backorder according to their updates. I think that should be more clear upon ordering.

Well made carbon steel wok
The wok is well balanced and has a great handle. I followed instructions as to seasoning it to avoid rusting. It takes a while and must be done after every use. This is way too time consuming. However, it’s a wonderful pot to use. Food comes out perfectly. I’m hoping that after several coats of seasoning it won’t needed to be done every time I use it.

Takes some work to get it properly seasoned
This is a nice addition to my assortment of cookware. It requires some serious seasoning before its first use, and after each use. I find carbon steel a little more quirky than cast iron and two months after my purchase i still dont have it seasoned to my liking. Although this is a flat bottom wok made for use on flat cooktops, i suspect it would be easier to season and cook with on a gas range. It also is darn near impossible to find a convenient spot for storage. The wok is large and the handle adds to storage challenges.

Worth the money!
Exactly as pictured. It’s huge and does a great job. Definitely follow the seasoning guidelines before use. Carbon steel makes stand above the rest, but beware: it’s so good at conducting heat you need to have extra care not to burn your hand. Great item for a carbon steel wok that is a steal compared to others.

This is the one you want.
This steel wok is the one I’ve been looking for I didn’t know it. I’ve used others - a round bottom one that sits on a ring, a fancy copper one, etc. I wasn’t sure about this one when it arrived because the “before use” instructions included heating all surfaces, and my stove is inductive. It took a while and patience to “roll” the sides onto the stove’s surface, but I got about 85% of the side surfaces to “turn blue.” It must be enough, because the wok has become non-stick, generally. As things cook, I can use the sides to “keep” the almost-done pieces and they do not stick. Follow the instructions for the break-in seasoning and for clean-up! The wooded handle stays cool, and the metal handle makes for easy “dumping out” the pan. Often not so hot as to need a pot holder.

Skilled cooks only
Unless you are extremely skilled with stainless steel woks already, do not buy. Extremely difficult to get the initial seasoning/cooking right. Somehow I ruined it and it’s all rusted and my food got so smoky and burnt! Probably user error but again- I don’t think it would be that hard so just tread carefully if you are a regular kitchen cook.

Don’t recommend - wok rusts even with proper care
Was very excited for this wok & took great to follow all cure and care instructions. Unfortunately after a few short months the wok is completely rusted. I would recommend looking at other woks.

Nice Wok
Good size and style. Looks beautiful once its seasoned. Its not stainless steel so you need to be careful to keep it from rusting, but this is the traditional type. It is a little heavy which is good but more challenging for my wife.
