    Use & Care

    Use

    • Ideal for gas and electric cooktops (not induction-compatible).
    • Oven safe to 425°F.
    • Do not heat pan empty.
    • Use wood, plastic or heat-resistant nylon tools to avoid scratching tin lining.

    Care

    • Allow to cool completely before cleaning.
    • Hand-wash.
    • Dry immediately with soft cloth.
    • Avoid using steel wool, steel scouring pads and harsh detergents.
    • Copper will develop rich patina over time. This will not affect cooking performance.
    • To keep exterior looking new, use copper polish or combination of lemon and salt.
    • Tin lining protects food from reacting with copper but will become discolored over time. This is normal. Depending on frequency of use and type of food cooked, tin lining may eventually need to be replaced. To prolong usefulness, avoid cooking acidic ingredients in tin-lined cookware.

    Most beautiful Pan I have ever owned.

    If you own copper you know it’s going to get a patina. If you own tin-lined cookware you know it’s going to darken after use. Everyone complaining about this pan have overheated or used the wrong utensils, this pan requires care. If you are not going to put the effort to take care of this pan, don’t buy it. I love this pan, and if you love classic cookware then this pan is for you.

    This is the second pan I purchase through William Sonoma and again this pan has a black spot I am beyond disappointed that an item this pricy has issues with it’s quality control

    10” copper fryer

    Perfect for cooking except one thing didn’t realize just how hot the handle got I mean really hot burnt my hand. Are there any suggestions on what is used ?

    Just buy it, especially while it’s on sale. It’s a wonderful pan, lightweight, perfect heat distribution, and beautiful. I’m so pleased with Ruffoni! I may become a Mauviel convert.

    Too Hot to Handle

    Excellent for cooking, but the handle gets HOT immediately, too!
