Summary
Named for the Japanese word for "connection," the Zwilling Kanren collection celebrates the bond formed while cooking and eating together. Uniting German engineering and Japanese craftsmanship, each 48-layer Damascus-style blade is forged from high-performance carbide stainless steel and hand honed using the three-step Honbazuke process. Triple-riveted Micarta handles feature Zwilling's signature curved bolster, promoting a secure grip and comfortable, fatigue-free cutting.

Use & Care
Use
- Always use caution when handling sharp objects.
- Avoid cutting on hard surfaces such as stone, metal or glass.
- It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.
Care
- Hand-wash with warm water and a mild detergent; rinse and dry immediately.
- Avoid cleaners containing bleach or citrus extracts.
- Sharpen as needed. With regular use and honing once a week, you should not need to sharpen your knife more than once or twice a year.
- Sharpen your knife at home using a whetstone or knife sharpener designed to sharpen between a 9- and 12-degree angle, or have it sharpened by a professional.
- Store knife in a safe place to protect its edge and prevent injury.

Great sushi knife!
[This review was collected as part of a promotion.] Bought this to prep and slice my sushi rolls:-) works great, very sharp. But it does have a chip in the blade. No idea how it got there... still need to contact zwilling about warranty. Will update review if I can depending on how it goes:-)

German Engineering and Japanese beauty and sharpness! This knife is not only beautiful with its Damascus blade, but its razor sharp, true to Japanese knives. Unlike most Japanese knives, it's made of very durable, chip resistant steel that protects that thin, sharp edge. I love the western style handle that's comfortable and is made of Micarta that has the look and feel of wood, but is as durable as a synthetic material. The curved bolster, an innovative feature of the Zwilling Pro knives, makes it incredibly comfortable in every hand.

Nice beautiful, long carving knife to add to your cutlery collection. Use this for that holiday roast or turkey but don't forget to bring it out during BBQ season to slice that brisket.These knives are an exceptional example of German engineering melding with Japanese craftsmanship. Each knife is made from FC 61 steel which is used in razor blades, which speaks to its cutting edge retention, chip resistance and strength. A total of 48 layers of beautiful Damascus steel surround the core. Hand sharpened and honed, each one of these knives are hand crafted by 46 Japanese artists in Seki Japan. The curved bolster enables the whole length of the blade to be used for cutting and chopping and also creates a comfortable grip to ease wrist fatigue. The linen Micarta handle has a gorgeous wood look that feels firm and safe to grip. The impeccable balance, weight, stunning appearance and acute edge makes Kanren a must have knife.

Really like this 9" Kanren Knife for carving meats & roasts because it slices just the thickness I want when carving. Nice long blade so gives us larger pieces. This made in Japan knife is top quality and stays very sharp.
