Summary
Named for the Japanese word for "connection," the Zwilling Kanren collection celebrates the bond formed while cooking and eating together. Uniting German engineering and Japanese craftsmanship, each 48-layer Damascus-style blade is forged from high-performance carbide stainless steel and hand honed using the three-step Honbazuke process. Triple-riveted Micarta handles feature Zwilling's signature curved bolster, promoting a secure grip and comfortable, fatigue-free cutting.

Use & Care
Use
- Always use caution when handling sharp objects.
- Avoid cutting on hard surfaces such as stone, metal or glass.
- It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.
Care
- Hand-wash with warm water and a mild detergent; rinse and dry immediately.
- Avoid cleaners containing bleach or citrus extracts.
- Sharpen as needed. With regular use and honing once a week, you should not need to sharpen your knife more than once or twice a year.
- Sharpen your knife at home using a whetstone or knife sharpener designed to sharpen between a 9- and 12-degree angle, or have it sharpened by a professional.
- Store knife in a safe place to protect its edge and prevent injury.

Quality knife
Perfect for almost everything. I am not a fan of a chef's knife, this Santoku knife is the perfect size for my hand and I use it every single day. It's beautiful too. It's amazing the difference a sharp, quality knife makes.

My New Everyday Knife

Perfect Japanese/Western Hybrid Knife
I have had my eye on this series for a few months. I have had a set pf Pro S knives for 20 years and they have been great; however, after buying a Santoku many years ago, I have grown to prefer a slightly thinner blade for most slicing and chopping. While I like the idea of Japanese knives such as Shun and Miyabi, I was wary of the chipping issue that can occur with such hard steel blades. My wife and kids tend not to be as careful as I am. Also, I could not find a Japanese style handle that felt comfortable in my hand. I think I am hardwired to prefer the weight distribution and grip of a western style handle. The Kanren series solves both of these problems. The FC61 steel is a nice compromise between edge retention, sharpening ease and durability. The Kanren handle fits perfectly in my hand. The bolster allows an easy transition between a traditional grip and a pinch. Initially, I did not like the look of the flare at the back end of the handle, but, after a few minutes of use, found it really served well as a anchor point for the back of my hand when using a traditional grip. The Damascus steel is visually stunning but it does not have as many layers as many other knives, so the effect can be a little subdued. Not a problem for me. All in all, I have found the perfect knife for me. I also have the Nakiri and look forward to learning the potential of this blade style. Over the next few months, I will definitely add the 5.5 prep and possibly the chef’s knife to this collection.
