    Use & Care

    Use

    • Always use caution when handling sharp objects.
    • Avoid cutting on hard surfaces such as stone, metal or glass.
    • It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.

    Care

    • Hand-wash with warm water and a mild detergent; rinse and dry immediately.
    • Avoid cleaners containing bleach or citrus extracts.
    • Sharpen as needed. With regular use and honing once a week, you should not need to sharpen your knife more than once or twice a year.
    • Sharpen your knife at home using a whetstone or knife sharpener designed to sharpen at a 16-degree angle, or have it sharpened by a professional.
    • Store knife in a safe place to protect its edge and prevent injury.

    Don't waste your money on these!

    My husband bought these knives for our anniversary less that a year ago. We take very good care of them (used daily on wood cutting board, hand washed, hand dried and put away). While the blades are nice and sharp, every single tip has broken off. Our Wusthof's that are 4 years old are still fully in tact. Shun just seems like super flimsy product for so much money!

    The knives SHOULD last a lifetime

    My husband purchased these for my birthday. This was supposed to be a set to last for years. We have used them almost daily with extreme care, always on a wood cutting board and always immediately hand washed and put away. While they are excellent for precision cutting, the edges and tips are much too delicate. The steel is much too soft. We had to return one immediately when we opened it because the tip was bent. We have since had another tip bent on another knife. I have never had an issue like this with any of our German knives.

    Chipped edge from normal use

    Beautifful knife set we bought for our son and his wife, along with a separate 10" carving knife. Incredibly, the edges have chipped while simply carving meat and hitting bone. They are effectively ruined. We have had our Henckels set for 15 years and have NEVER had anything like that happen with them, and with regular sharpening and honing, cut as smoothly and effortlessly as the Shun.

    These are fantastic knives!!!

    Have been using the Shun Classics for the past 6 months and have been delighted with the quality and how sharp they are if maintained properly. I bought the left handed "D" handles. I have no idea how the manufacturer or WS chooses which knives are made for lefties but I have 5 so far and would purchase more if they offered them. The handles are comfortable but I wish the smaller knives had a bit larger grip. And it does require some adjustment if you're like me and have been using a heftier blade.The VG-10 steel and layered technique is how blades have been made in Japan for centuries. This results in a much thinner and lighter cutting/slicing tool. One word of caution is to always keep the edge sharp and cut with a forward and down motion. I think this is a delicate hand made piece that has an esoteric look and feel and may not be for everyone. For me though it's the best knife I've ever had the pleasure of using and can't say enough about the craftsmanship.

    These knives are great.

    It took some getting used to. My knives for the last 25 years were Henkels which have considerably more heft that the Shun. (They went to my son who will probably have them for another 25.) But the edge is impeccable. And once used to the weight I love them completely. Very comfortable in my hand, effortless to use.

    Outstanding performance, Superlative Knives!

    I debated several knife lines before purchasing this Shun Classic 9 piece set. The set is expensive, which was part of my debate, but I decided to go ahead based on the idea that knives are a lifetime investment, and I couldn't be more impressed. I received a lot of helpful information about knives at the Crabtree Valley Store from Jake, the assistant manager. This set has nearly every knife you would want (I added a utility and a second paring). The quality of the knives leaves me grasping for adjectives-superlative, amazing, unreal. Cutting potatoes is like slicing through warm butter. I can't overstate the sharpness. The handle is very comfortable, the blade is very aesthetically pleasing. These knives have exceeded my expectations and I am thrilled with my purchase.
