Use & Care
Use
- Always use caution when handling sharp objects.
- Avoid cutting on hard surfaces such as stone, metal or glass.
- It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.
Care
- Hand-wash with warm water and a mild detergent; rinse and dry immediately.
- Avoid cleaners containing bleach or citrus extracts.
- Sharpen as needed. With regular use and honing once a week, your knife should not need sharpening more than once or twice a year.
- Sharpen your knife at home using a whetstone or knife sharpener designed to sharpen at a 16-degree angle, or have it sharpened by a professional.
- Store knife in a safe place to protect its edge and prevent injury.

Wonderful slices
I’m not a professional chef but this knife has performed well since I recently received it. I like the size and weight and without a lot of effort it cuts quite well.

Blade chipped
Received this knife as a gift. First time using it, slicing a raw steak, the blade chipped off a half a dime size. Could never use it because the chip threaded everything. I do wanted to love it.

Online order nightmare
I ordered this knife as a Christmas present. The package arrived on time but was the wrong knife. This required me to initiate a return and the recipient had to take it to UPS. The rep said as soon as it was rec’d by UPS a replacement would be sent. Wrong! They received return and now original item back ordered. I received an email saying item was shipping with a Track My Package button. I pressed button and no order on record. Calling today to cancel order

Every kitchen needs one of these
Love the knife, very sharp and high quality. I really wanted a chef's knife that could cut through veggies and more. This knife has a great reputation and a timeless look to it. I would definitely recommend every kitchen have one of these.

Shun knife
Great knife but the handle is not what you would expect from a Shun. Handle is fine but not of same quality as previous Shun products.

Just a bad knife overall
This knife is not a Japanese knife. It is very heavy and thick, and is handle heavy. It has a very curved belly, not making it even possible to do a Japanese style cut, and you just need to only rock the blade. Anyone who has some experience with a good Japanese gyuto would understand how this knife is not good.

Awesome knife
I’ve had this knife for about 8 months and it’s still just as sharp as the day I got it. Just last weekend I sliced right through the tip of my thumb (user error, not the knife’s fault, obviously) and man was that a clean cut. I’ll never own a different knife brand

Classic Chef's 8"
Light, sharp, fast. Too, light, maybe... Bought it for my wife, but she prefers a much heavier heel and bolster. Could be rated higher, but I haven't sharpened it yet. Shun makes great products. Their kitchen shears are fantastic "5-Stars".
