    Summary

    Use & Care

    Use

    • Always use caution when handling sharp objects.
    • Avoid cutting on hard surfaces such as stone, metal or glass.
    • It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.

    Care

    • Hand-wash with warm water and a mild detergent; rinse and dry immediately.
    • Avoid cleaners containing bleach or citrus extracts.
    • Sharpen as needed. With regular use and honing once a week, you should not need to sharpen your knife more than once or twice a year.
    • Sharpen your knife at home using a whetstone or knife sharpener designed to sharpen at a 16-degree angle, or have it sharpened by a professional.
    • Store knife in a safe place to protect its edge and prevent injury.

    Fantastic Knife

    This is my second Shun Classic from WS. Tried it out right away. Very sharp and easy handling. Slices vegetables and meat easily. I will probably keep it away from bones. My other Shun is a Nakiri, and it is about ready for a professional re-sharpening. I love these knives and I love when they are on special!

    Great light duty knife

    This is one of my favorites in the kitchen for light duty cutting. Ultra fine dicing shallots, chiffonade herbs to literal paper thin strips. Blade is very thin so for any heartier vegetables I'd use something else.

    Best in hand

    I am a lefty and this knife fits my hand perfectly. My fingertips rest on the "D" with a pinch grip and the balance and accuracy of this knife is perfection. Of all the Shuns I currently own, this is the one I tend to grab. Take impeccable care of this and all your Shuns and they will last a lifetime.

    My favorite Shun Classic

    Of all the Shun knives that I have, this is my current favorite. I love the way it feels in my hand. I am a lefty and the D-shape gives my fingers a place to rest with a pinch grip. The weight and balance of this gem is amazing. I tend to grab this one more than any.

    My son gave me the left-handed version of this knife. What a change !!! Not only is it a great knife, but it's also beautiful to look at.

    True gyuto profile

    I own a number of Shun knives in several product lines (Classic, Premier, and Kaji). They are all good knives, but I find myself using this Asian Chef's knife for most of my prep work. It is a true laser of a slicer and so easy to work with on the board. I like to use a pinch grip and I prefer a true Japanese gyuto blade profile. This knife hits both of those requirements. I wish Shun offered this blade shape in more sizes, but the 7" is really versatile for a home cook (which I am) so I am not complaining. This is my go-to knife for most meal prep tasks. Note: like any quality Japanese knife, you must take care of the blade. Use a good cutting board, hand wash, and sharpen as needed using good quality water stones.
