    Forged in Seki, Japan, these beautiful Miyabi knives combine exceptional Japanese craftsmanship with the best German blade-hardening technology and stunning modern design. The blades are expertly layered with SG2 micro-carbide powder steel using an innovative ice-hardening process. Each side is finished with 50 layers of floral-patterned Damascus steel to protect the long-lasting sharpness of the Cryodur blades while increasing their corrosion-resistance. The scalpel-like knife edges are hand sharpened using a traditional three-step Honbazuke method, which includes a final mirror polish to create the exquisite finish. The traditional D-shaped handles are made from prized Karelian (Masur) birch – the only wood ever used in a Fabergé egg. Sold in a set of four, these knives are remarkably sharp, slicing cleanly through steaks and chops without tearing to preserve the delicious juices.

    Use & Care

    Use

    • Always use caution when handling sharp objects.
    • Avoid cutting on hard surfaces, such as stone, metal and glass.
    • It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.

    Care

    • Hand-wash with warm water and mild detergent.
    • Rinse and dry immediately.
    • Use honing steel regularly to maintain cutting edges of blades.
    • Sharpen as needed. With regular use and honing, knives should not need sharpening more than once or twice per year.
    • Sharpen knives at home using whetstone or knife sharpener, or have them sharpened by a professional.
    • Store knives in safe place to protect edges and prevent injury.

    These steak knives are absolutely stunning. Beautifully crafted in Seki Japan, they have a traditional D shaped Birchwood handle, and have an SG2 inner core, which is protected with 100 layers of authentic damascus design. Stays unbelievably sharp, and glides through beef, pork and poultry. You will definitely see these knives coming and going. Always get raves when my guests use them.

    The Miyabi Birchwood steak knives are masterpieces. The SG2 steel is extremely hard, which makes for a long lasting edge that just glides through meat. Love the design the 100 layers of steel create over the inner core. Traditional Japanese knife made in Seki Japan is a special addition to our kitchen, and used for the most important special occasions.
