    Forged in Seki, Japan, these beautiful Miyabi knives combine exceptional Japanese craftsmanship with the best German blade-hardening technology and stunning modern design. The blades are expertly layered with SG2 micro-carbide powder steel using an innovative ice-hardening process. Each side is finished with 50 layers of floral-patterned Damascus steel to protect the long-lasting sharpness of the Cryodur blades while increasing their corrosion-resistance. The scalpel-like knife edges are hand sharpened using a traditional three-step Honbazuke method, which includes a final mirror polish to create the exquisite finish. The traditional D-shaped handles are made from prized Karelian (Masur) birch – the only wood ever used in a Fabergé egg. This set includes four essential knives, kitchen shears, a honing steel and a bamboo storage block.

    • Each SG2 micro-carbide powder steel blade is protected by 100 layers of Damascus stainless steel (50 on each side) and hand hammered in a striking floral pattern.
    • Authentic thin Japanese blade profile enables lightweight handling for precise control.
    • Fine carbide distribution creates razor-sharp blades with Rockwell hardness 63.
    • Double ice-hardened FRIODUR blades provide remarkable durability, corrosion-resistance and edge-retention.
    • Using historic Honbazuke method, blades are hand honed to exceptionally sharp 9.5–12 degree angle.
    • Blades have rounded spines and heels.
    • Karelian (Masur) birch handles feature mosaic pin and engraved Miyabi logo on end cap.
    • Ergonomic D-shaped handles are comfortable to hold.
    • Bamboo storage block safely holds up to 12 pieces; nonslip feet prevent unintentional movement.
    • Knives and honing steel are handcrafted in Seki, Japan – a city renowned for producing the highest-quality cutlery.

    Use & Care

    Use

    • Always use caution when handling sharp objects.
    • Avoid cutting on hard surfaces, such as stone, metal and glass.
    • It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.

    Care

    • Hand-wash with warm water and mild detergent.
    • Rinse and dry immediately.
    • Use honing steel regularly to maintain cutting edges of blades.
    • Sharpen as needed. With regular use and honing, knives should not need sharpening more than once or twice per year.
    • Sharpen straight-edge knives at home using whetstone or knife sharpener, or have them sharpened by a professional.
    • Sharpen serrated knife at home using sharpener specifically designed for serrated blade, or have it sharpened by a professional.
    • Store knives in safe place to protect edges and prevent injury.

    Quality not what it used to be

    The handles were unfinished and rough wood (separate knives we ordered from this same set were a finished handle as were the ones we got years ago). Several knives were also bent. Would NOT buy these again, quality has tanked.

    Beautiful!

    Beautiful Knife Set, I love the birchwood handle and the blade design. It cuts just as good as all ZWilling Products and comes with a bit more maintenance and care. After cooking for 20 years, this was a gift from my husband and I am so grateful to have this set.

    Quality, Craftsmanship & Beautiful!

    What a beautiful set of knives! The craftsmanship it spectacular. They are not only beautiful but sharp and so easy on the hands and wrist. I am very please with this purchase! So much so that I went ahead and purchased the 6" chefs knife and the Nakiri in addition to the 5.5" prep knife. This is not an inexpensive set but it is worth the investment and pleasure of having for years! My next splurge will likely be their steak knives.

    Japanese excellence

Bought an additional magnetic knife block to be able to see the whole set of kknives. The Birchwood knife block that comes with the set is also a work of art. Definitely nicer than any other knife blocks I have seen. The knives themselves are very sharp and feel really nice in your hand.
